Crispy Vegan Potato Waffle
So crispy and delicious–just add a little ketchup!
  1. Peel and cut in half all your potatoes and boil until you can pierce a fork through easily.
  2. Mash with a tsp. salt, pepper, granulated garlic, and scallions.
  3. Mash with a potato masher until all mixed together–may appear dry and that’s ok!
  4. Get your waffle maker heated and add non-stick spray, put about 1/4 cup of your mashed potato in your waffle maker, pressing down until completely crispy and browned.
  5. Place on your plate add more scallions for garnish, drizzle with a little ketchup and enjoy!!!
