Crispy Vegan Potato Waffle
So crispy and delicious–just add a little ketchup!
Peel and cut in half all your potatoes and boil until you can pierce a fork through easily.
Mash with a tsp. salt, pepper, granulated garlic, and scallions.
Mash with a potato masher until all mixed together–may appear dry and that’s ok!
Get your waffle maker heated and add non-stick spray, put about 1/4 cup of your mashed potato in your waffle maker, pressing down until completely crispy and browned.
Place on your plate add more scallions for garnish, drizzle with a little ketchup and enjoy!!!
