This makes an amazing appetizer and makes a good treat when I have girlfriends over. With a little wine, and a side salad…viola! I make this with my homemade baguette. If I know I am going to have girls over, company, or simply want to make it as part of our dinner, I plan to make the french baguettes on my baking day.
Ingredients:
One french baguette
5 roma tomatoes
Fresh basil
Olive oil
salt and pepper
Cut the baguette at an angel into 1/4 inch thick pieces
Place on a baking sheet, brush with olive oil, and place in the oven set on broil for about 5 minutes or until lightly toasted.
Cut the roma tomatoes in half and chiffonade the basil. To chiffonade the basil stack fresh basil on top of each other and roll lengh-wise. Cut across to make thin ribbons of basil.
Once the baguette cuts are out of the oven, squeeze the tomatoes over the bread with the juice and the pulp. Sprinkle basil leaves all over the baguette pieces and sprinkle with a little kosher salt and fresh cracked black pepper. Place on a nice plate and serve. Your guests and/or family will simply love this bruschetta.
