(Taken from A Taste of Italy cookbook.)
Ingredients:
1 c. water
1/2 c. shortening
3/4 c. flour
pinch of salt
4 eggs.
My Aunt Connie made these and they look amazing…
Instructions:
Bring water, shortening and salt to boil. Remove pan from heat and pour in the flour all at once, stirring constantly. Return pan to the heat, stir constantly until mixture leaves the sides of the pan. Transfer mixture to a bowl and let cool. Add eggs one at a time beating after each one, until glossy. Drop by small spoonfuls onto a damp cookie sheet. Bake at 375 for 20 minutes (do not open oven). Remove from oven and prick each one to let steam escape. Cool on a rack and fill with your favorite pudding or filling. I used 2 cups heavy cream, 2 tbsp sugar and whipped. Today I added cocoa to the hvy cream to make chocolate whip cream. Pudding makes the cream puffs heavier and the whip cream makes them fluffy! Use your imagination.”
