Nothing beats this chicken sandwich, grilled and spicy, on top crisp lettuce with a blue cheese spread, and topped with this fluffy homemade bun. It’s out of this world and with a little planning in your kitchen…simple to make.
Plan for this in your weekly menu and prepare it on a day when you have some time at home in the afternoon. I love baking on my laundry day. It’s a very domestic, productive day, and I loved all the accolades I received from my family for a delicious meal.

Hot Buffalo Chicken
Ingredients:
6 chicken breasts
chili powder
garlic powder
salt and pepper
Directions:
You can either grill these on your grill or on your grill pan indoors. If using a grill pan, rub olive oil on your chicken breasts, first and then your spices and on a hot skillet, cook until cooked through. I use the touch test and if they bounce back using my tongs, they’re done. If they are still rare, your tongs will sink in the middle of them. When done, let them rest on a plate and tent with foil while you prepare the buns and the hot sauce.
Hot Sauce:
1/4 cup hot sauce
2 tbsp. butter
Put in a large bowl and microwave for about 40-60 seconds until the butter has melted and the sauce is warm. Stir and let sit.
Next, cut your buns in half using a serrated knife and put your blue cheese spread on the bottom bun, two crisp leaves of Romain lettuce and sprinkle with salt and pepper. Slice on a diagonal your chicken breast and place in your hot sauce bowl and toss to cover all the chicken. Place the chicken neatly on your lettuce, top with a thinly sliced onion and top with the bun.
