easy fortune cookies

Fortune cookies are so fun to make and is a perfect way to end an Asian inspired meal. I planned to make Chinese for one of my dinners and thought it would be fun to create a Chinese themed dinner and get my children involved for some learning fun. In my planner when writing down my menu plan, I wrote down all that I would need to make my meal and for the fortune cookies.  You’re going to love these cookies; they’re hands-down better than store-bought.

  • 5 tablespoons unsalted butter
  • 4 large egg whites
  • 1 cup superfine sugar
  • 1 cup all-purpose flour, sifted
  • Pinch of salt
  • 3 tablespoons heavy cream
  • 1 teaspoon almond extract
  • Nonstick cooking spray

  • Heat oven to 400 degrees. Spray a cookie sheet liberally with cooking spray. Melt butter in a small saucepan over low heat; set aside.

  • In the bowl of an electric mixer, combine egg whites and sugar, and beat on medium speed, about 30 seconds. Add flour and salt, and beat until combined. Add butter, heavy cream, and almond extract, and beat until combined, about 30 seconds.

  • Pour 1 tablespoon of batter onto half of the baking sheet, and spread with the back of a spoon into a thin 5-inch circle; repeat on the other half of the sheet. Bake until the edges of the cookies turn golden brown, about 8 minutes.

    • Meantime, write out some messages on thin strips of paper, lay out some parchment paper, and have a glass ready. 

     
    Take your spatula and place one cookie, carefully, on the parchment paper and lay your message on one half of your cookie. Working fast, bend the cookie in half and then in half the other way using your glass to help mold it. Let it rest and crisp in the glass now, which will help keep the shape of your fortune cookie. Continue to do the rest…baking off 4 at time is a good number to work with so they don’t set before you get to them. They crisp up as they cook making it hard to fold the cookie.
