Who doesn’t love muffins? Make them mini, use some white, whole wheat flour, some mini chocolate chips and cinnamon and you’ve got a kid friendly meal that you and your children will love.
Pop them into lunches, take them as a snack, and pop them into your mouth. They’re truly delicious!
Muffin recipe
Whisk together in large bowl:
2 cups all-purpose flour ( I use half white, whole wheat flour and my kids can’t tell a difference. I will soon get them over to whole wheat pastry or all white, whole wheat!)
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
Whisk together in another bowl:
2 large eggs
1 cup milk or cream
2/3 cup sugar or packed light brown sugar
4 to 8 tbsp. warm melted butter
1 tsp. vanilla
Instructions:
Add to the flour mixture and mix together with a few light strokes just until the dry ingredients are moistened. Do not overmix; the batter should not be smooth. Divide the batter among the muffin cups. Bake until a toothpick inserted in 1 or 2 muffins comes out clean, 12-15 minutes.
Variations:
Add chocolate chips
Make mini or large muffins
Make the basic recipe and dip in melted butter and then cinnamon/sugar
