Yes, these are good! Enjoy these after some tacos or anytime. I recently got this recipe from a friend of mine who cooks and bakes authentic Mexican foods frequently…she pronounced Churros my rolling her r’s. How dare she, too cute!
2 tbsp. cinnamon
3/4 cup sugar
1 cup milk
6 tbsp. butter
1 tsp. salt
1 cup flour
3 large eggs, beaten
oil for frying
plastic bag for piping in the hot oil
On the stove top, boil together the milk, butter, and salt. Once boiling, turn down heat to low and add your flour, stirring together to form a ball. Turn off heat and let cool for at least 5 minutes. Add your beaten eggs to the flour mixture and mix together until you get a smooth paste. Scoop batter into a plastic bag and snip the tip of the bag to pipe into the oil.
Pour vegetable oil in a large skillet, about an inch deep. While that’s getting hot, combine your sugar and cinnamon together in a medium dish. This will be to dust the churro immediately after coming out of the hot oil.
Once your oil is nice and hot, pipe out strips of the batter about 4 inches long. Keeping piping out strips being careful to not overcrowd them. Watch them and turn to brown the other side. Once browned, take off heat and place directly into the cinnamon, sugar mixture to coat.
