An Assortment of Muffins
This is my favorite muffin recipe and I love to make an assortment. Here I made a little bit of everything to please even the pickiest eater in my house.
Ingredients:
2/3 cup butter
1 cup sugar
3 eggs
3 cups flour
3 heaping tsp. of baking powder
1 tsp. salt
1 cup milk
For my muffins, above, I have a blueberry/strawberry muffin, a mini chocolate chip muffin, and a plain muffin. All are topped with a pecan streusel. (I left the pecans off some so my children would eat it!)
Steusel topping:
2 tbsp. flour
2 tbsp. brown sugar
1/4 tsp. cinnamon
2 tbsp. chilled butter
small handful of chopped pecans (optional)
small handful of chopped pecans (optional)
Directions:
Cream the butter and sugar until fluffy. Add the eggs, one at a time, beating well after each addition. Sift together the flour, baking powder and salt. Add the dry ingredients alternately with milk. When well blended, add what you like, stirring gently to incorporate.
This mixture will keep in the refrigerator for two or three weeks.
Bake in greased muffin tins at 375 degrees. F. for 15-20 minutes. Check with a toothpick at 15 minutes by inserting the toothpick into the center of the muffin. If the toothpick comes out clean, it’s done.
