Baked Brown Butter and Maple Syrup Acorn Squash

This is amazing! Not my children’s favorite, but that’s okay…I made it for my husband and I for lunch with a side salad. They opted for mac n’ cheese:) Fork tender, sweet, and you can taste the brown sugar and maple syrup with every bite. You will enjoy this one. Happy fall!

preheat oven to 400 degree
serves 2

Ingredients:
1 acorn squash cut in half
2 tbsp. butter
2 tbsp. maple syrup
2 tbsp. brown sugar
salt and cracked black pepper

Directions:
Cut acorn squash in half and scoop out the seeds. Combine the butter, sugar, syrup, salt and pepper in a bowl and rub all over the insides of both cavities of the squash. 
Put right-side up on a baking sheet and bake for about 1 hour or until you can pierce with a fork easily.
