These are as simple as simple can get! I wanted just a plain potato, no plant milk or flours and this is just perfect!!

- 4 russet potatoes
- 3 scallions chopped
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. granulated garlic

Instructions
- Peel and cut in half all your potatoes and boil until you can pierce a fork through easily.
- Mash with a tsp. salt, pepper, granulated garlic, and scallions.
- Mash with a potato masher until all mixed together--may appear dry and that's ok!
- Get your waffle maker heated and add non-stick spray, put about 1/4 cup of your mashed potato in your waffle maker, pressing down until completely crispy and browned.
- Place on your plate add more scallions for garnish, drizzle with a little ketchup and enjoy!!!
