This Chili is so delicious! If you are on a whole food plant based diet–you’ll want to have this recipe I’ve made in your repertoire for sure! So hearty and perfect for fall or anytime! I love to ladle over white rice!

Ingredients
- 1/2 diced onion
- 1 bell pepper
- 1 carton mushrooms of your choice
- 1 cup frozen corn
- 1/2 can kidney beans
- 1/2 can black beans
- 2 garlic cloves minced
- 3 tbsp. tomato paste
- 1 lb. veggie broth
- 1/2 diced sweet potato
- salt and pepper to taste
- 1 tbsp. chili powder
- 1 tbsp. cumin
- 1/2 jalepeno diced

Instructions
- Get a 5 qt. dutch oven hot and ready to steam your veggies.
- put your onion, bell pepper, mushrooms, jalepeno, beans, garlic and sweet potato in and stir in your pot until softened.
- add your beans with their starch, frozen corn and tomato paste.
- Add your spices and vegetable broth.
- Stir and allow to come to a boil and then turn down to a simmer for about an hour.
- Check your spices adding salt if needed. Time to eat!! Enjoy this cozy warm stew! Serve over rice as an option or serve with corn chips!
